In need of comfort food!


I’m just going to do a quick journal entry, and log off.  I’m going to fully utlize this Day of Rest and get off the computer for the rest of the night.

It was raining this morning (that’s good!) but Dallas doesn’t know how to drive in rain and so the traffic was UNBELIEVABLE. (that’s bad.)  For the rest of the day, I’ve been kind of angsty. So I’m going to fully unwind.

Speaking of which, here is some fantastic comfort food for situations like this:

Vegan Pumpkin Pancakes 

Whisk together:

¾ cup pureed pumpkin
2 tbsp canola oil
¾ cup soy milk/almond/rice/nondairy milk
½ cup water
2 tsp apple cider vinegar
2 Tbsp pure maple syrup
2 Tbsp vanilla extract

In another bowl, combine, and whisk:

1 cup all-purpose flour
2 tsp baking powder
½ tsp salt
1 tsp ground cinnamon
1 tsp ground ginger
¼ tsp ground nutmeg
Pinch of cloves

Mix the dry ingredients into the wet, until there are no more clumps left, but don’t overmix!
Preheat a skillet and, using ½ cup of mix per pancake, cook about 3 min, flip and cook another min. You can tell when it's ready to flip because the edges become darker. Also, if they're not really ready to flip, they'll scrunch up on your spatula and annoy the hell out of you.
